Pasta Aglio e Olio
We love this simple pasta dish, which despite the easy prep and minimal ingredients, really makes for a great meal.
We follow the Pasta Aglio e Olio inspired by Chef from Binging With Babish closely, but here are a few notes.
Ingredients
- Elephant garlic makes this easier as you only need to peel and chop one or two cloves.
- Bottled lemon juice is fine!
- The red pepper flakes add spice, which can set off heartburn. Black pepper can be subbed.
- While you can use the cheapest pasta available ($1/pound), something higher quality really does take this to another level. We like Rao’s Homemade Bronze Die Cut Spaghetti Pasta ($2/pound).
Cooking
- Cook the pasta in as little water as possible to really concentrate the starch.
- Don’t stir the garlic around while it’s browning or it will clump up.
